Equipment

  • 1 dutch oven

Ingredients

  • 1/2 pound hickory smoked bacon
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 1/2 green bell pepper diced
  • 56 oz baked beans 2-28 oz cans, such as Bush's
  • 1/3 cup BBQ Sauce such as Sweet Baby Ray's
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 3 tablespoons molasses
  • 2 teaspoons dried mustard
  • salt & pepper to taste

Instructions

  • Preheat oven to 350 degrees F. Spray large dutch oven pot with nonstick cooking spray and place over medium heat. Cut bacon into small pieces and render fat out. You want to cook the bacon right before it gets browned and crispy. Using a slotted spoon, remove bacon to paper towel lined bowl. Set aside.
  • Pour off excess bacon grease, leaving 2 tablespoons in the bottom of the dutch oven. Place back on the heat. Add in onion, garlic and green bell pepper and stir to saute in bacon grease. Cook 3 minutes or until it starts to brown.
  • Pour in cans of baked beans into the pot with BBQ sauce, brown sugar, apple cider vinegar, molasses, dried mustard, salt and pepper. Stir well and remove from heat. Add tight fitting lid and bake 45 minutes to 1 hour.
  • Let stand 10-15 minutes before serving.
