I made it last night on the recommendation of my daughter and it was a huge hit! The only thing I did differently was omit the Rosemary (I cannot stand the taste of it) My daughter scarfed it down. Having it over mashed potatoes made it that more delicious!

The flavors of this Irish stew are ahhh-mazing! I used ground beef because that’s what I had on hand. We ladled the stew onto a mound of sharp white cheddar mashed potatoes. Yum!!!

Best beef stew I’ve ever eaten! I was looking for something similar to what I once ate in Ireland and this is it! I doubled it to have leftovers and made a garlic mashed potato to put it over. I will add this to my collection of must have comfort foods!!

This turned out great. The butter/flour combo added at the end is such a great idea. I always used to struggle with getting my stew thick and gravy-like. This is thick and full of flavor.
