Hello,
Just wondering if this recipe could be used with Rice instead of the spaghetti? if so would you guess 2 cups dry rice?
I have made it before and it is very delicious but would like to change it up a bit.

Waaaaaaay too much spaghetti – plan to try again with 1/2# spaghetti and more onion & peppers. Too cheesy, also…will try less next time. Husband likes taste but agreed with my opinion. Made as written, probably would feed 8 – easily.

I’ve made this recipe several times as written and loved it, but the last two times I made it, I added cooked broccoli cuts after shredding the chicken and liked it even more. I also think some sliced mushrooms would be a nice addition to change it up even more.
