But First, What is Taco Rice?

Taco Rice is a take on a Japanese inspired, Okinawan dish with the ingredients of a Tex-Mex taco. Ground beef, lettuce, cheese, and tomatoes are served on a bed of rice and salsa on top. This version of Taco Rice is amazing and sure to be a new family favorite.

What to Serve with Taco Rice

Taco Rice is pretty versatile – serve it with chips, add it to tortillas as burrito filling, add it to hard or soft taco shells as taco filling, or in a tostada shell or taco salad. Taco Rice can also be made meatless for a vegetarian option. If you want to use ground turkey or pork, that works fine too.

How to Make Taco Rice

In just 30 minutes and a handful or ordinary ingredients, you’ll have dinner on the table! For full recipe details including an ingredients list and measurements, see the printable recipe card down below. Here is what you can expect when making this recipe.

Cook Ground Beef, Onion + Garlic

Brown ground beef and onion together in a large skillet. Once that has browned, add garlic and saute a couple minutes longer.

Stir in taco seasoning, rice, broth (or water), and tomato soup.

Do I have to use canned soup?

No. This is just how my mom always made it, but feel free to substitute with tomato sauce, diced tomatoes or even salsa in a pinch.

Simmer Until Rice is Cooked

Place lid on skillet and simmer on low until rice is cooked through (follow your package directions). It’ll be about 15 minutes.

Can I use Minute Rice?

Yes. Minute Rice will work with this recipe. Just adjust your cook time according to the package directions. You can also use brown rice, if you prefer.

Top with Cheese + Serve with Optional Toppings

Add shredded cheese and give everything one last stir.

Serve over a bed of lettuce, with tortilla chips and/or you choice of optional toppings listed below.

While these are all optional, here are few topping ideas that go great with Taco Rice.

Storage Directions

Place any leftover Taco Rice in an airtight container and into the fridge for up to 4-5 days.

To Reheat, microwave until heated through.

To Freeze, place in a freezer safe, airtight container. Taco Rice will stay fresh for up to a month. Allow to thaw in the fridge overnight before reheating.

What is Orange Chicken?

Orange Chicken is a popular staple menu item for many Chinese cuisine restaurants. Bite size chicken pieces are battered in a flour/cornstarch mixture and fried and toss with an orange sauce. My orange sauce consists of orange juice, soy sauce, ginger, sugar, rice wine vinegar and, best of all…fresh orange zest!

How to Make Orange Chicken

Make the Orange Sauce

Heat sesame oil in a saucepan over medium heat. Add garlic and sauté for a couple minutes until fragrant, being careful not to burn.

Add sugar, orange juice, soy sauce, rice wine vinegar and ginger. Give it a stir.

Add cornstarch slurry and increase heat to bring to a boil. Stir in orange zest.

Keep on the lowest heat while you fry chicken, stirring occasionally.

Fry the Chicken

Heat oil in large dutch oven pan or deep fryer. Beat eggs and place in a shallow dish for dredging.

Combine flour and cornstarch in a 2nd shallow dish. Cut chicken breast into bite size pieces.

Dredge chicken pieces in egg first, then flour/cornstarch mixture.

Drop chicken pieces one by one into hot oil and fry for 2-3 minutes, flipping chicken over in oil halfway through. This will need to be done in batches to avoid overcrowding.

Remove chicken pieces to a paper towel lined platter.

Toss Chicken + Sauce Together

Toss cooked chicken pieces in orange sauce to thoroughly coat. Garnish with sesame seeds and scallions. Serve hot over white rice.

What is the Best Chicken to Use?

There isn’t a cut of chicken that is better than the others for making orange chicken. I used boneless, skinless chicken thighs. I like that chicken thighs are slightly juicer than chicken breast tends to be. They are also very forgiving is you have a tendency to overcook. Feel free to use what you prefer or have on hand.

What to Serve with Orange Chicken

Since Orange Chicken packs a huge punch in the flavor department, I like to pair this with plain white rice. You can also use cauliflower rice, or brown rice if you prefer. Other sides dishes that go great with orange chicken is my Ramen Stir Fry or Better Than Take-Out Fried Rice. You really can’t go wrong with either choice.

Storing Leftover Orange Chicken

Store leftover Orange Chicken in the fridge, in an airtight container for 3-4 days. To reheat, place in a skillet over low heat.

Freezing – Orange Chicken freezes great, and stays fresh for 3 months. Allow to thaw before reheating.

Make Ahead – If you’re short on time, frying the chicken before needed is an option. Make the orange sauce and toss in chicken. Heat until cooked chicken pieces are warmed through.

Made with Italian Sausage, potatoes, and kale, this Zuppa Toscana Recipe is exactly what you need to warm up on a cold day! The sweet Italian sausage flavors, the creamy broth, and the potatoes and kale add substance to make this hearty and healthful. Olive Garden Copycat Recipe

Have I got a winner of a dinner for you today! A hearty, easy to make, stick to your ribs soup that everyone will love! Zuppa Toscana looks pretty plain jane, but let me tell you, the flavor in this will knock your taste buds off. One pot of this doesn’t last long and it’s just what we needed to warm up and fill some empty tummies! A copycat recipe to Olive Garden’s Zuppa Toscana, you can make this at home, too!

Make this soup your own! Variations:

I encourage you to experiment and make this Zuppa Toscana Soup your own, based on your likes, dislikes and what you have on hand. Here are a couple of suggestions to get you started, let me know how it goes in the comments below.

  • Spinach: replace kale with spinach! The spinach will wilt a lot more than the kale will, but still equally delicious with a big nutritious kick.
  • Beans: Instead of using potatoes, try using canned white beans, or really any can of beans will work!
  • Bacon: saute some bacon along with the sausage for an extra shot of flavor!
  • Veggies: feel free to load this sucker up full of vegetables. Carrots, celery, zucchini, broccoli, it’s all fair game.
  • Smoked Sausage: don’t like Italian Sausage? No problem! Try a tasty smoked sausage. Since most of the flavor comes from the meat, be sure you’re using one with lots of flavor.

How to Make Zuppa Toscana Soup

The directions for this recipe are really simple! For full details see the recipe card down below. Here is what you can expect when making this recipe:

Cook Sausage

In a large pot, cook sausage until browned and cooked thoroughly. Remove from pot and drain on paper towels.

Add Remaining Ingredients (except heavy cream)

In same pot, melt butter and saute onions until softened, about 5 minutes. Stir in garlic and cook until fragrant, another minute. Stir in cooked sausage and flour. Cook 2 minutes to cook out the raw flour taste. Add in chicken broth and seasonings. Bring to boil, then reduce to simmer. Stir in kale and potatoes.

Pro Tip: To take the bitter edge off of the kale, blanch it for a couple minutes in boiling water before adding to soup.

Cover and cook 10-15 minutes or until potatoes are tender.

Add Heavy Cream + Serve

When ready to serve, remove the bay leaf and add the heavy cream.

My Soup Isn’t Thick! What do I do?

If you made this recipe and you noticed that its not as thick or creamy as you’d like, the solution is a relatively quick fix. After the soup is made in its entirety, simply whisk 2 tablespoons of flour into 1/2 cup water to create a slurry and then gently stir that into the pot of soup. After a minute or two, it should thicken up slightly.

If you have read this section before you’ve begun making Zuppa Toscana, simply increase the flour to 6 tablespoons instead of 1/4 cup (which is 4 tablespoons). Stir the flour into the cooked onions and sausage before adding in the broth. That should do the trick!

Storing Leftover Zuppa Toscana Soup

Store any leftovers in an airtight container in the fridge for up to 3-4 days.

To Freeze – I love that this soup freezes so well! Allow soup to cool completely before placing in a freezer safe, airtight container. Soup will stay fresh for up to 3 months in the freezer.

To Thaw – Allow to thaw overnight in the fridge. Reheat gently to keep from getting mushy potatoes.

Easiest Crockpot Pork Chops Ever

If you’re looking for a dinner that basically cooks itself, this easy pork recipe is for you! All you need to do is add the ingredients into the slow cooker, turn it on high, and come back 6 hours later. Shred the pork, stir in the remaining ingredients, and dinner is served.

How easy is that?! Perfect for busy weeknights and those days you just don’t want to cook. Plus it’s a warm, hearty, and filling meal. I often find myself turning to this one on cold, dreary days. The creamy sauce and warm Southwest flavors make this an ideal comfort food recipe.

As a bonus, there are usually lots of leftovers left which means even less cooking the next day. Seriously, this crockpot pork is a real winner in my house and once you see how easy it is, it may become a staple in yours too!

What’s the Best Pork to Use?

This Southwest pork can be made with a 3 to 4 pound pork roast or thick pork chops. I used 3 thick pork chops with the fat removed, but since the meat gets shredded, it’s totally up to your personal preference.

I would avoid bone-in pork chops, as you want something thick that can shred easily. You also want to choose meat that has some fat in it, as that adds lots of flavor, but trim any excess fat to prevent the dish from becoming too greasy.

How to Make Southwest Crockpot Pork Chops

This crockpot pork is made with a creamy soup, a few Southwest seasonings, corn, black beans, and of course, cheese. You can’t forget the cheese! For full recipe details, see the printable recipe card down below. Here is what you can expect when making this recipe:

Add Sauce Ingredients + Pork to Crockpot

Whisk together the soup, water, corn, spices and cheese in the bottom of a crockpot. Add the pork to the sauce. Turn the crockpot on high and cook for at least 6 hours.

Shred the Pork

Remove the pork and shred the meat. Stir the shredded meat into the sauce with the black beans, cilantro, and scallions.

Serve

Serve your Southwest pork over rice or with corn tortillas.

Tips & Variations

If you don’t cook a lot of pork in your crockpot, here are some tips to help you out.

  • How to tell when pork is done. The length of time it takes to fully cook your pork will depend on the slow cooker and the size of the roast or pork chops used. The best way to tell if your pork is ready is with an internal thermometer. Pork is fully cooked at 145° F.
  • Can I make this with chicken? While I’ve never made this recipe with chicken, you can definitely use chicken breast or thighs. Just be sure to adjust the cooking time as chicken tends to cook faster than pork.
  • Add some heat. If you want to kick up the Southwest flavor a bit more, you can add in some jalapeno slices to the dish before serving.

Side Dish Ideas

I typically serve this shredded crockpot pork over a bowl of rice for a quick and easy dinner. You can also serve it with corn tortillas…taco-style. If you want a lower-carb option, try quinoa or cauliflower rice instead of plain white rice.

With the black beans and corn right in the dish, you can easily get away with calling this Southwest pork a meal on its own. However, if you want a little something extra, you can’t go wrong with a bright green salad or some roasted veggies like green beans or cauliflower.

Leftovers & Storage

One of the best things about crockpot pork chops is the leftovers! Extras easily store for a few days and can be made into burritos, tacos, sandwiches and quesadillas. You can even stuff leftover pork into a baked sweet potato, then top it with lots of cheese for a simple and healthy meal.

  • How to store leftovers. Leftover Southwest pork will last in the fridge for up to 3 days. Be sure to store in an airtight container. If you are serving with rice, I recommend storing the rice separately.
  • How to reheat leftovers. I recommend reheating leftovers on the stovetop, though you can heat them up in the microwave as well.

Make amazing Chow Mein in 15 minutes! These noodles are highly adaptable and you can make them sweet or spicy, however, you like! I love this recipe along with the rest of my Asian-inspired recipes!

Quick and Easy Chow Mein!

I like Chow Mein from takeout places just fine. But when I make them myself, I can add in as much flavor as I want and eat a whole pan of them for maybe $2. I’m a cheap date, ya’ll. Also, I’m all about lazy fast recipes and this one does not disappoint. You can make these Asian-y inspired noodles as salty, sweet, spicy, or gingery as you’d like….and all in 15 minutes!

But First, What is Chow Mein?

Chow Mein is made up of stir-fried noodles with vegetables and/or meat. It’s a popular dish in most American Chinese restaurants and now in your home too!

I made this recipe so it could be a customizable base for your dinner needs, add meat, different vegetables, and even a different type of noodle if you want.

How to Make Chow Mein

When I say easy and quick Chow Mein I mean it! For full recipe details, check out the recipe card below! Here is what you can expect when making this recipe:

Cook Chow Mein Noodles

Cook ramen noodles in boiling water until chewy and *just* cooked. Drain and set aside.

*Chow Mein Noodles* – AKA ramen noodles. I used the cheap packaged ramen that comes with little seasoning packets. However, you are welcome to buy and use store bought fresh ramen or yakisoba noodles.

Sauté Cabbage, Onions + Ginger

In a large skillet, heat olive oil. Sauté onion, cabbage, salt, pepper, and ginger together until tender.

Toss Together with Flavorings

Toss together with cooked noodles, sugar, garlic, soy sauce, and sesame oil until heated through. Serve hot!

Storing Chow Mein

Any leftover Chow Mein can be stored in the fridge, in an airtight container, for up to 3 days. After that, things start to get a little too mushy!

Freezing Instructions

Chow Mein actually freezes really well! Let cool then transfer to a freezer-safe airtight container. Freeze for up to 3 months!

To reheat, thaw in the fridge overnight then do a quick stir fry to warm things up!

Chicken Alfredo Stuffed Shells – The Perfect Make Ahead Meal

Chicken Alfredo Stuffed Shells is a delicious meal that comes together quickly and everyone enjoys. Perfect for busy weeknights or lazy weekends in. It’s a recipe that is easy to double to feed a crowd, or freeze half for later, or bring to a friend.

How to Make Chicken Alfredo Stuffed Shells

In less than an hour you will have delicious, cheesy Chicken Alfredo Stuffed Shells. For full recipe details, see the printable recipe card down below. Here is what you can expect when making this recipe:

Cook Pasta

Bring a large pot of water to a boil. Add a large handful of salt and jumbo shells to boiling water, stirring occasionally. Boil for recommended time, drain, rinse and set aside.

Make Alfredo Sauce

Melt butter in a heavy-bottomed deep skillet over medium heat. Once butter is completely melted reduce heat to medium and add garlic to saute for a couple minutes, being careful not to burn.

Pour in the heavy cream and stir.

Whisk in cheese and continue stirring until cheese is completely melted and sauce is smooth. Taste and add in salt and pepper, as desired. Set aside.

Make Filling for the Shells

Combine shredded chicken, beaten eggs, spinach, ricotta cheese, mozzarella cheese, parmesan cheese, herbs and seasonings.

Add half of the alfredo mixture to the filling.

Assemble + Bake

Preheat Oven. Grease a 9×13 baking pan with butter or cooking spray.

Fill each shell to the brim with the filling mixture and place in the baking pan.

Pour remaining Alfredo Sauce over the top of shells. Sprinkle with remaining 1/2 cup mozzarella cheese and place in the oven to bake until bubbly and golden. Serve hot and enjoy!

Storage + Make Ahead Directions

Store leftovers in an airtight container in the fridge for 3-4 days. To reheat, place in the microwave and heat until warm, in 30 second intervals.

Make Ahead – Follow recipe directions up until baking. At this point, place foil over the top of the baking pan, and store in the fridge until ready to bake. Bake as the recipe details indicate.

To Freeze – Follow recipe directions up until baking. Wrap in plastic wrap and then aluminum foil and place in the freezer. Chicken Alfredo Stuffed Shells will stay fresh in the freezer for up to 2 months.

Allow to thaw overnight in the fridge. Remove foil and plastic wrap, and then cover with foil only. Bake as recipe directions indicate. Depending on how thawed the shells are, you may need to add time to the bake time.

You may want to consider using an aluminum/throw away casserole dish for freezing or if you plan to give this meal away to someone.

Ingredients

for the alfredo sauce

  • 1/2 cup salted butter
  • 1 cup heavy cream
  • 1 1/2 cups parmesan cheese use the real stuff
  • 2 cloves garlic minced
  • salt & ground black pepper to taste

for the filling

  • 1 cups chicken any kind, cooked and shredded (think: Rotisserie!)
  • 2 eggs beaten
  • 2 cups spinach frozen, drained in cheesecloth
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded

This homemade Chicken Pot Pie is one of my favorite comfort foods and I can’t wait to share it with you today. This pot pie is made with roasted chicken, veggies, spices covered in a creamy white sauce. It is then poured into a buttery, flakey pie crust and baked to golden perfection. This Chicken Pot Pie will fill your belly and keep you warm during the colder months ahead. You should also consider this Chicken Pot Pie Soup as a quick and easy variation!

But First, What is a Pot Pie?

Pot Pies are savory and filled with meat (typically chicken or turkey), veggies and combined with a gravy-like sauce. Typically pot pies have a top and bottom crust. I love having this pot pie recipe in my back pocket when I know I’ll have lots of leftover chicken or turkey (like around the holidays). It brings new life to leftovers and its something the whole family will enjoy.

Homemade or Store Bought Pie Crust

Nothing is better than a homemade pie crust. I have a simple pie crust recipe that is my go-to pie crust and is great with sweet or savory pies. For the sake of time, I used a store-bought double pie crust for this recipe. These are great, and some days it’s all about ease and simplicity. Am I right?

How to Make Chicken Pot Pie

I love that this this dish is a higher protein and hearty meal all in one pie. For full recipe details, see the printable recipe card down below. Here is what to expect while making this chicken pot pie recipe.

Make a Roux

Melt butter and oil together in a large pot over medium heat. Cook onion about 5 minutes or until the onions start to soften. Sprinkle flour over onions and stir to incorporate. Cook 2 minutes. 

Add Milk, Water + Seasonings

Whisk milk and water slowly into mixture. Stir constantly to prevent lumps. Once all liquid is incorporated, add in all seasonings and bouillon cube. Cook and stir until sauce has thickened, about 3 minutes.

Add in Veggies + Chicken

Steam broccoli and carrots until slightly tender, but still have a bite to them. I did mine in the microwave on a plate covered with plastic wrap and with a few splashes of water for 5 minutes. Stir in all vegetables and chicken into sauce.

Remove From Heat + Allow to Cool to Room Temperature

Take off the heat and cool to room temperature. The quickest way to do this is to spread it out onto a cookie sheet with high sides and place into the refrigerator for 10-20 minutes.

Roll Out Pie Crust

While filling is cooling, roll out 1 pie dough crust and place it carefully into a 9-inch pie dish, letting the excess drape over the sides and taking pieces of dough to fill in any gaps or holes. Set aside.

Add Cooled Filling to Crust, Add Top Crust + Bake

Once pie filling has cooled to room temperature, pour it onto the prepared pie crust dish. Roll the second pie crust out big enough to cover the filling and enough excess to make a nice thick edge.

Tuck the top crust underneath the bottom one to make a neat and even crust all the way around. Brush egg onto the top of the crust and cut 2-3 slits into the top.

Bake at 400 degrees for 40 minutes or until the top of the pie is golden brown and beautiful and delicious!

What to Serve with Chicken Pot Pie

Because pot pies are pretty hearty and already include your vegetable, you just serve it all on its own. If you feel like you need something else, I would opt for another vegetable or salad. Here are a couple ideas:

Storage Directions

Any leftover pot pie can be stored in the fridge, in an airtight container for 3-4 days. To reheat, feel free to warm in the microwave.

Make Ahead/ Freezing Directions

Chicken Pot Pie is a great dish to make ahead or to freeze and eat later. To make ahead, assemble the pie and cover with plastic wrap and store in the fridge until ready to bake.

To freeze: Follow recipe directions up until baking. At that point, wrap in plastic wrap and foil and store in the freezer for up to 2 months. When ready to bake, remove plastic wrap and foil. Replace foil and place in oven (while frozen). Add 20-30 minutes to the recipe baking time. Remove foil, and bake according to recipe directions.

Ingredients

Who Knew Homemade Ramen Was So Easy?

Homemade Ramen is a big thing these days and I’ve jumped headfirst into the delicious abyss. And it is good. Oh so good. Noodles in a tasty broth are my jam. If you’re looking for an authentic recipe for ramen, this isn’t it. BUT, if you’re looking for a yummy soup that your kids will eat, this is it!! I’ve added lots of veggies and mushrooms to beef it up and make up for the fact that there is no meat in this recipe.

How to Make Homemade Ramen

Ramen isn’t as hard as it looks to make. You can get show stopping fabulous results with just a bit of effort. For full recipe details and ingredients see the recipe card down below! Here is what you can expect when making this recipe.

Saute Onion + Carrot

In a large pot, heat olive oil. Sauté onion and carrot until onions are translucent.

Stir in garlic and mushrooms until fragrant.

Add Ramen Noodles, Flavoring Packets + Water

Add in ramen noodles, flavoring packets, and recommended amount of water according to package directions. Stir in enough chicken broth to create 8 cups of liquid, total. Bring to boil.

Can I Use a Different Broth?

Yes! If you’re vegetarian simply replace this with vegetable broth. Beef and pork broth also go really well in this dish. I do recommend using a liquid broth over a powdered soup base. The flavor of liquid broth packs a stronger punch in my opinion.

Add Soy Sauce, Sesame Oil + Chard

Stir in soy sauce tasting it as you go. Stir in sesame oil and chard.

Serve Ramen Hot with Garnishes

Once noodles are cooked, serve ramen hot and garnish with chopped green onion, radishes, boiled eggs, and black sesame seeds. (These veggies are optional, but really add to the umami of this dish!)

Storing Leftover Ramen

Unfortunately, ramen doesn’t keep well. This is because of the noodles soaking in the broth and becoming soggy.

If you want to enjoy this your ramen for a couple of days I would suggest boiling the noodles separately from the broth and veggies. That way the ramen noodles can be added to the warmed up broth whenever you’d like.

Make sure to cover and refrigerate and it should last up to 5 days!

  • 3 cups red chard chopped
  • green onion
  • sliced radishes
  • boiled eggs
  • black sesame seeds

Instructions

  • In a large pot, heat olive oil over medium heat. Sauté onion and carrot 4 minutes or until onions are translucent.
  • Stir in garlic and mushrooms until fragrant, about 1 1/2 minutes.
  • Add in ramen noodles, bouillon, and 1 cup of water. Stir in enough chicken broth to create 8 cups of liquid, total. Bring to boil.
  • Stir in soy sauce, 1 tablespoon at a time, tasting as you go. Stir in sesame oil and chard.
  • Once noodles are cooked, serve soup hot and garnish with chopped green onion, radishes, boiled eggs, and black sesame seeds.

Notes

*I used these udon noodles (found at Fred Meyer) because I couldn’t find actual legit fresh ramen noodles and didn’t feel like using the $0.15 ramen packs, though either of those would and could work.

This Italian Pasta Salad has it all! Tender pasta, salty pepperoni, cubed mozzarella, lots of diced veggies and a homemade olive oil and garlic dressing. The longer it sits the better it tastes! Perfect for potlucks, BBQs or simple side dish. This pasta salad is probably one of my go-to cold side dishes for summer. Everyone loves them because they are easy to make, very fresh and oh so delicious. From Macaroni Salad to Tuna Pasta Salad, they’re all good!

Make This Italian Pasta Salad Your Own

The beauty of this recipe is how easily the veggies and pasta can be interchanged. Here are a few great options to choose from. Of course, my recipe includes many of the ingredients listed, but if you are missing one or two, don’t let that stop you from making this! It will still be delicious!

  • Any short-cut pasta
  • cucumber

How to Make Italian Pasta Salad

It’s super duper simple to pull this easy side dish together! The hardest part is chopping a few veggies, but I find that therapeutic. For full recipe details, including ingredient amounts, see the printable recipe card down below. Here is what you can expect while making this pasta salad.

Cook the Pasta

Cook pasta according to package directions. Since this will be refrigerated, I would cook this 1 minute past al dente. It will still have a bit of a bite because of the refrigeration.

Chop the Veggies

This recipe calls for tomatoes, cucumbers and bell peppers, but feel free to add in whatever ingredients you have! Artichoke hearts, sun-dried tomatoes, parmesan cheese, etc..

Make the Dressing

Whisk a simple mixture of olive oil, vinegar, garlic, and Italian seasoning together and season well.

Can I use a different dressing?

Most Italian Pasta Salads call for pre-made Italian salad dressing which is totally fine to use! It’s such a simple choice, of course…you are welcome to use it! For a creamier salad dressing, feel free to use a pre-made ranch or blue cheese dressing. Be sure to read the notes within the recipe card below for other options.

Toss Together + Serve

Toss everything together. The longer this salad has to marinate together, the more delicious it becomes!

This particular recipe is good for up to 5 days in the fridge, though is most delicious day 2 after it’s had some time to marinate.

Can I freeze pasta salad?

No, I would not recommend freezing this recipe, simply because fresh veggies do not thaw very nicely and will not taste very fresh post-freezer.

Ingredients

For the pasta salad:

  • 3/4 pound rotini pasta cooked
  • 1/2 cup red onion finely diced
  • 8 oz mozzarella cheese cubed
  • 5 oz pepperoni cubed
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh basil
  • 3/4 cup sliced black olives
  • 1 pint cherry tomatoes halved
  • 1/2 english cucumber diced
  • 1/2 yellow bell pepper diced

For the pasta salad dressing:

Instructions

  • Cook pasta according to box directions. Drain and rinse with cold water.
  • Add pasta to a large bowl and add in remaining prepared salad ingredients.
  • For the dressing, whisk together garlic, vinegar, sugar, and seasonings. Stream in olive oil to emulsify and pour over salad. Toss to coat and add in extra Italian seasoning as desired.
  • Serve pasta salad or cover and refrigerate for up to 5 days.

Notes

Feel free to use 3/4 cup prepared Italian Salad Dressing in place of the homemade.

Crowd Pleasing Chicken Kabobs

This is one of the easiest and quickest dinners that is sure to please even the pickiest palates! I marinated the chicken in a delicious concoction of everyday ingredients that most will have on hand already, skewered them up alongside some colorful vegetables and broiled them! Make some rice, and you’ve got dinner!

Chicken Kabob Marinade

This marinade is perfect because it offers a sweet and savory flavor that guarantees you get flavorful and juicy chicken kabobs every time, whether you broil them or grill them. Using basic pantry items you’ll already have: honey, soy sauce, oil (canola or olive is fine), orange juice, ground ginger, garlic, and salt + pepper…you’ll be able to throw these together in no time.

Kabob Tips and Tricks

  • Cut all the chicken in roughly the same size and shape so they cook evenly.
  • If you’re using wooden skewers, don’t forget to soak them for at least 30 minutes. If dry skewers don’t catch on fire (and they might), they’ll likely char too much or become too brittle to support the ingredients.

How to Make Chicken Kabobs

Cut Chicken into Similar Size Chunks

Cut chicken breasts into large chunks that are all the same size. Set aside.

Make Marinade + Add Chicken to Marinade, Refrigerate

In large bowl, whisk the rest of ingredients together. (At this point, you can reserve some of the marinade to dip your cooked chicken skewers later on!) Stir in chicken chunks to cover equally in marinade. Cover bowl or transfer into air tight container. Keep in refrigerator until ready to cook. Ideally, this would marinate for 2+ hours. If using bamboo skewers, start soaking them now. 

Preheat Broiler + Build Your Skewers

To cook, cover a rimmed baking sheet with aluminum foil. Preheat broiler. Take wet skewers and slide pieces of chicken onto them leaving small spaces in between to ensure even cooking. If you have onions, peppers, zucchini or any other vegetable that would be good on a skewer, feel free to add it on!

Broil

Once all skewers are ready, place onto prepared baking sheet and broil about 4 minutes per side. You’ll know they’re cooked when the chicken starts turning more of a white color and the marinade starts to give the edges some nice brown colors. Of course your cooking time can vary depending on how hot your broiler is and how big your chicken chunks are. The internal temperature of the chicken should read 165° F. I like to remove from broiler when the thermometer reads closer to 155-160° F to account for carry over cooking.

Can I add Veggies to the Skewer?

Yes! Roasted veggies are so easy and are great to add. Feel free to add tomatoes, zucchini, peppers, onions, mushrooms, or even broccoli. Sometimes building skewers with like items on the same skewer works a little better, since cooking times vary between meat and veggies.

Storing Leftovers

Store leftover kabobs in an airtight container in the fridge for up to 4 days. Reheat in the microwave until meat is heated through.

Freezing Chicken Kabobs

Yes, you can freeze kabobs. I have found it to work better if I freeze them uncooked. Lay the uncooked kabobs on a parchment paper lined sheet pan. Cover and flash freeze for 3 hours. After place the now-frozen kabobs in an airtight freezer safe container for up to 3 months.
