Fruit & Waffle Breakfast Pizzas

Are you a morning person? Cause I am totally NOT. If given the chance, I’d hibernate for DAYS. It’s in my genes you guys. I can’t.help.it.

Typically, my husband picks up my slack and will get up with my bright eyed, bushy tailed kids at 6 so I can sleep an extra half hour or so. {Is he the best man in the world or what? SERIOUSLY.} Come September though, I’m gonna have to just suck it up and get up when my alarm actually goes off.  My daughter is heading to morning kindergarten.

I tried to get her into afternoon kindergarten, but after asking the school secretary about it, she laughed, then realized I was serious and broke the news to me that they only offer morning kindergarten at that school.

NOOOOOOO!!

I almost *almost* swore at her. But then walked away redirecting my anger magically into hunger. Now THAT’s a skill. #girlproblems 

ANYWAYS.

This easy breakfast idea is one of the ways I’m streamlining our morning routines so we can be on time to school. I use the term ‘on time’ loosely, PS.

Why do I love this recipe? Let me count the ways:

  • my 5 year old can make this completely on her own; I just lay out all the ingredients
  • it literally takes less than 5 minutes to pull everything together
  • it’s surprisingly tasty even though……
  • it’s healthy
  • You can adapt this to work with what you have on hand. Score!

Fruit and Waffle Breakfast Pizzas…..who knew? Here’s how you make them:

Ok, prepare yourselves for how easy this recipe is. Take some whole wheat freezer waffles….and stick them into the toaster to heat through. These little dudes are found in the {say it with me} FREEZER SECTION at your local grocery store. I see these everywhere, so you should be able to find these easily in your local grocer.

1 minute later, we’ve got our pizza ‘crusts’.

Schmear on a little vanilla greek yogurt, and then top with any kind of fruit you’d like!

My family loves all berries, so we had our pick between blueberries,

and bananas! We always have bananas on hand.

We had these for breakfast the other day and it was seriously the easiest thing in the world because I just put everything out on the counter and these two made their own pizzas themselves! How great is that?! Seriously one and done in about 3 1/2 minutes.

This was my husband’s. Who knew he was so……artsy?! He chose blackberry greek yogurt as his base.

If you want to be even fancier, sprinkle on a little powdered sugar. Totally not necessary, but fancifies this recipe up 🙂

Yes I realize fancifies is not a word.

Fruit & Waffle Breakfast Pizzas

Ingredients

  • 4 whole wheat freezer waffles such as Eggo brand
  • 12 oz greek yogurt containers two 6 oz containers, in any flavor you like
  • powdered sugar as decoration, if desired

fruit to top pizza with

  • strawberries
  • raspberries
  • blueberries
  • bananas
  • kiwis
  • apples
  • peaches

Instructions

  • Toast eggo waffles in toaster to heat through.
  • Spread each warm waffle with half a container of greek yogurt.
  • Top with any sliced fruit you like and sprinkle with powdered sugar.

    No afternoon kindergarten? What kind of school are they running? Seriously, I remember loving that my daughter was in the PM Kindergarten class because we could both sleep in and have a leisurely morning before she left for the afternoon. Now she’s 19 and I’m pretty sure that’s why she still love sleeping in:) This looks like one of the easiest and tastiest breakfast ideas I’ve seen in a while and we’ll definitely be trying it soon!

    This looks like an awesome breakfast idea! Even though I tell myself I’ll get up when the alarm goes off…it never happens. I always end up hitting the snooze until it gives up 😀 I like the assembly line idea so you can choose how much of each fruit to add! Perfect for an easy breakfast when guests visit!!

    Great idea…and good for you. My kids are grown…but you might just find me eating this anyway! I get up at 5 even now when I am not working…I love having that hour of peace and quiet to myself.
