Hey everyone! I’m still in the middle of the Caribbean cruising away {see my Instagram pics here} but I wanted to check in with ya’ll with my latest Plated meal I got a few weeks back. These crispy fish sandwiches were pretty darn tasty, especially with these Old Bay Home Fries! I snapped a few photos of the cooking process to share with you today.  This was an easy meal to put together and was super delicious too 🙂

I don’t have the recipe for you because everything comes pre-portioned, but feel free to recreate at home with the same ingredients or order one of these boxes yourself 🙂

Home fries get started first: Idaho potatoes, old bay seasoning, salt, pepper, olive oil all tossed together and baked! I sprayed my foil with cooking spray to make sure nothing would stick.IMG_0075

Homemade tartar sauce is next! This is mayonnaise, lemon juice, salt, pepper and fresh tarragon!

Red Fish pieces were coated in a flour mixture, than an egg mixture and then into panko breadcrumbs and cooked in a little bit of olive oil.

Toss the fries and cook a few more minutes until tender.

To assemble the sandwiches, split some soft, warmed buns in half and fill with arugula, tomato slices, the fish pieces and that tartar sauce. Take a bite and get ready to live.

If you’d like to try the Plated service use this link here! {Or feel free to recreate this recipe at home!} And you can check out what’s on the menu for this week to see if anything looks good. Today we’re getting another box of dinners and I’m super excited about yet another pasta dish we’ll be getting. You can see all the goodies I make from Plated on Instagram, fyi.

Have a great day, friends.

PS- I buy these meals on my own! When you order a Plated box using one of my links, I receive a small discount to go towards my next two meals.
