Pork Roast

Today, I’m sharing this awesomely easy and equally delicious Pork Roast Recipe. It’s sweet, spicy and only requires 5 ingredients. SERIOUSLY. It’s a Sunday dinner kind of meal that you can feed to the masses that no one will complain about. It’s just a lovely roasted and flavored piece of meat, especially with these. Or this. Orrrrrr this. Mmmm………

And behold, it came to pass that Lauren could never become a vegetarian.

Amen.

Here’s how you make it:

Rosemary, maple, mustard salt and pepper in a bowlStart by throwing together the sauce we’re going to slather on the meat. This is just equal parts dijon mustard to maple syrup {use the real kind, guys!} with some chopped fresh rosemary and some salt and pepper.

Sauce mixed in a bowlStir that together and set it aside.

Unbaked pork roastNow grab a 2-2 1/2 pound pork roast {the kind tied together with string that has a layer of fat on just the one side} and sprinkle generously with salt and pepper. Take a hot second to rub these seasonings in.

unbaked pork roast with sauceThen pour over half of that sauce we made and rub that all around too. This stuff is bueno. Throw the roast into the oven and cook it ’til it’s done. {1-1 1/2 hours or until the internal temp of the meat registers at 145 to 150 degrees}. Pull it out of the oven, tent it with foil for 10 minutes, slice and serve.

Add on the leftover sauce if you see fit. I thought it was better with a little extra maple syrup added to it….but that’s just because I like me some sweet meat.
This is a fabulous way to cook up a big roast and impress a crowd, plus it was super simple to do. Set it and forget it!

This Rosemary Maple Mustard Pork Roast Recipe is a fabulous way to cook up aa easy, big, tasty roast and impress a crowd. Enjoy!

Ingredients

  • 5 lb. pork loin roast or 2 -2.5 lb. roasts
  • salt & pepper to taste
  • 1/4 cup dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon chopped fresh rosemary

Instructions

  • Preheat oven to 375 degrees. Coat small roasting pan or cookie sheet with aluminum foil and lightly spray with nonstick cooking spray. Place roast onto prepared pan and sprinkle generously with salt and pepper.
  • In a small bowl, stir dijon mustard together with maple syrup, rosemary and more salt and pepper. Rub half of this mixture onto the meat. Bake for 1-1 1/2 hours or until meat reaches an internal temperature of 145-150 degrees. Remove from oven, cover with foil and rest 10 minutes before slicing. Serve with remaining sauce.

    Looks delicious! Being Dutch I’ m not familiar with your names for the meat you use. Would you add any salt, pepper or seasoning to your meat before you have it tied up?

    Hi Lauren, this is such a great recipe, it’s so easy but it packs quite a punch and it seems like such a fancy meal. The last time I made it, I sliced a couple of onions and put a stick of butter in the bottom of the pan and then put the meat on top of them. When I served it, I spooned some of the butter/onion/sauce mix over the top of the meat, oh my, so good. Thank you for this awesome recipe!

    This pork roast was delicious! I made it for my family, and it looked so good I ended up having a piece, too. That is a real testament to the recipe as I have never cared for pork and I have not eaten it in 19 years. Truly–19 years! Yet I had to eat a piece of this pork roast. It was really good, too! You can be sure we’ll make this again–easy and delicious.

    The sauce is good, however, I ignored my better instincts and followed your cooking method despite the voice in my head saying, ‘wait!!! Noooooo!!’ Friends, please learn from my mistake and SEAR your pork first. If you cannot sear it, you will need to cook it twice as long (or more) as the recipe suggests. I followed the directions 100%, and the pork was so dry we couldn’t even swallow it. I’ve used this same roast from the same farmer all summer to make excellent, moist dishes, but the difference is searing!

      You could, but you’d have to cook it for hours over indirect heat to make sure it didn’t burn. Your best bet: get pork chops and grill them with the same sauce.
