Mini Chocolate Chip Doughnut Pancake Dippers

I’ve done something a little wacko. And by wacko I mean totally awesome.

I think it’s safe to say that this household loves doughnuts.

I also think it’s safe to say that everyone in the world loves doughnuts. Umm…who doesn’t love doughnuts? NO ONE.

See?ย I speak the truth.

I love real fried doughnuts a whooooooole lot… so much so thatย I hardly every buy them because I know I will eat them ALL.

Again, I speak the truth.

Well my lovelies, I’ve figured out a way to trick my brain into thinking that these pancakes are doughnuts because….they look just like doughnuts! What a concept! Take regular old pancake batter, stir in some chocolate chips, spoon into a mini doughnut pan and bake! 4 minutes in the oven and you’ve got a seriously fun breakfast that kiddies will just eat up….literally.

ย If you don’t have a mini doughnut pan, a mini muffin tin will work just fine too. Dip these babies into some syrup and that’s breakfast! Or make them ahead, freeze and microwave as needed throughout the week. My daughter LOVED these and my husband was bummed he left for work early.

Moral of the story: it pays to be late for work when your wife is a food blogger. Also, you will be the coolest Mom on the block if you make these. At least that’s what I told myself last Thursday.

Pancake Mix Donuts

These Pancake Mix Donuts are a sweet little handheld pancake in a doughnut waiting to be dipped in syrup! Such a good breakfast or dessert.

Ingredients

  • 1 cup milk
  • 1 egg
  • 2 tablespoons oil or melted butter
  • 1/2 teaspoon vanilla
  • 1 teaspoon vinegar
  • 1 1/4 cups self rising flour
  • 1/2 teaspoon baking soda
  • 1 tablespoons sugar
  • 1/4 cup mini chocolate chips

Instructions

  • Preheat oven to 325 degrees. Spray mini doughnut pans {or mini muffin tins} with non stick cooking spray and set aside.
  • In a large bowl, whisk milk, egg, oil, vinegar and vanilla together. Pour in remaining ingredients and whisk until mostly smooth. Spoon into prepared pans until half full. Bake 4-6 minutes or until just cooked through and barely brown. Cool 5 minutes then turn upside down to remove. Serve warm with maple syrup.

    Adorable! I do have a mini donut pan but it must be a little different shape than yours b/c mine come out more domed than yours do; it’s a Wilton pan. These would make my little girl so happy!
