My family makes a pie nearly identical to this, except using fresh summer peaches and peach Jell-o! I was just looking through my grandmother’s old cookbooks yesterday and found her handwritten recipe for this cold peach pie. I love the idea of using strawberries also.

I was taught to make a similar pie with red raspberries. The way to make this one was to make the jello using half the amount of water, chill until starting to get to a thicker stage, like egg whites, then with your mixer, beat the jello until it was nice and foamy, fold in Cool Whip, and layer into a graham cracker crust, and top with a little more whipped topping. You can also use real whipped cream.
