Lemon Blueberry Coffee Cake | With a Crumb Topping

A few days ago, my mother-in-law purchased a rather large pack of fresh blueberries and didn’t know what to do with them. She asked me if I’d like some and I happily took them off her hands! What did I make with them? Of course a bazillion batches of my favorite blueberry muffins and then two lemon blueberry coffee cakes. And I still have some blueberries left! Into the freezer for them.

This Lemon Blueberry Coffee Cake is another adaption, this time from the Pioneer Woman. Just a few days ago she posted a recipe for Blueberry Crumb Cake and I thought “It’s a sign! Something else to make to get rid of all these blueberries!” This recipe is delicious just on its own, but I just had to make a few changes and add in the lemon. I don’t know why I have this uncontrollable urge to add lemon to blueberry recipes I just do! It’s really a match made in heaven, lemon, and blueberries. Similar to peas and carrots. Or rice and beans. Or Lauren and Gordon! (Haha! Precious.) So, if you happen to run into some blueberries, snatch them up and make some of these yummy treats! They are sure to please!

Main Ingredients Needed

I know this list looks long but trust me everything here are simple pantry staples. Here’s everything you need to make this Lemon Blueberry Coffee Cake:

  • Butter – used for flavor and for moisture.
  • Sugar – to sweeten the
  • Cinnamon – warm and comforting spice to flavor the cake.
  • Egg – used for structure and texture.
  • Vanilla – for simple flavor.
  • Flour – this fills out the cake.
  • Baking Powder – this is our leavening agent.
  • Salt – to balance out the sweet.
  • Milk – used for moisture.
  • Lemon Juice + Zest – I used both lemon juice and zest to bring all of that zing!
  • Blueberries – I had fresh blueberries to use but feel free to use thawed frozen blueberries.

For the Topping

And for the oat topping you’re going to need a lot of the same ingredients as the cake, plus a couple more. Easy!

  • Butter – melted! This holds the crumb topping together.
  • Brown Sugar – to sweeten.
  • Flour – this coats everything to help hold it together along with the butter.
  • Oats – this brings some great texture.
  • Lemon Zest – even more lemony goodness.
  • Cinnamon – and even more comforting cinnamon spice.

How to Make Lemon Blueberry Coffee Cake

1. Preheat Oven + Prep

Preheat oven. Grease a 9 x 13-inch baking pan and set it aside.

2. Make Cake Batter

Combine flour, baking powder, and salt. Stir and set aside.

Cream butter with cinnamon and sugar. Add egg and mix until combined. Add vanilla and mix. In a small bowl or liquid measuring cup, stir milk together with lemon juice and zest. Add flour mixture and milk alternately until totally incorporated. Do not overbeat.

3. Top with Blueberries + Crumb Topping

Pour the batter into the prepared baking pan and smooth the top. Sprinkle fresh blueberries over the top of the cake.

In a separate bowl, combine topping ingredients. Sprinkle over the top of the cake.

4. Bake + Serve!

Bake cake until golden brown. Sprinkle powdered sugar over the top, if desired. Cut into slices and serve.

Storing Lemon Blueberry Coffee Cake

Blueberry Coffee Cake can be stored at room temperature or in the fridge, covered, for up to 3 days! This makes a great dessert or sweet breakfast which means you can enjoy it for a couple of days, if it lasts that long. I like to warm it up for a couple of seconds in the microwave to imitate that fresh-out-of-the-oven feel but this cake is equally as good cold.

This Apple Coffee Cake was something I whipped up in a flash because we were invited over to dinner at a friends’ house. It’s a pretty simple cake, but looks much fancier than that, don’t you think? This is because of the glaze, the streusel, it’s on a cake plate, it’s round and not in its baking pan still!

I needed something to take and this is the dessert I came up with from what I had on hand. As I was photographing the finished product I was thinking to myself how easy this cake was to make, but how semi-upscale it looked! Basically, if you have a very plain recipe for something, try adding a glaze and/or a streusel. That will jazz it right up and make people want you to be their live-in chef.

Shall we make some cake?

To start making this Apple Coffee Cake you’ll need to gather up some dry ingredients, wet ingredients, and apples.

Dry Ingredients

  • All-Purpose Flour – this fills out the cake and makes it cake!
  • Baking Powder – makes the cake light and fluffy.
  • Salt – enhances the flavors.
  • Baking Soda – this helps the cake rise.
  • Granulated Sugar – to sweeten.
  • Cinnamon – a super good spice that compliments apples!
  • Nutmeg – nutmeg helps bring out and enhance the cinnamon taste as well as adding its own flavor to the mix.

Dry Ingredients

Wet Ingredients

  • Apple – use whatever apples you have on hand and cube them.
  • Canola Oil – this helps the texture of the cake stay consistent throughout.
  • Eggs – adds structure to the cake.
  • Low Fat Buttermilk – helps moisten the cake but also provides a slightly tangy flavor.
  • Low Fat Sour Cream – another moistening agent. If you don’t have buttermilk or sour cream on hand just replace with milk.
  • Vanilla Extract – this flavors the cake.

How to Make Apple Coffee Cake

  1. Preheat oven to 325 degrees. Spray a 9-inch springform pan with non-stick cooking spray and set aside.
  2. In a large bowl, whisk all dry ingredients together. Make a well in the center and pour all wet ingredients in. Slowly start mixing the wet ingredients into the dry and stir until just combined.

  1. Find an apple in your fridge, peel it, core it and dice it up. I almost grated my apple because I despise huge chunks of fruit in my cakes, but then changed my mind at the last minute and cubed mine up into tiny little pieces…because I can. That’s why.
  2. Now pour in the apple cubes and stir it up. Voila! Cake batter.

  1. Pour that bowl of goodness into the springform pan and smooth the top.

Streusel

Now onto the streusel. Warning: I made a huge amount of streusel. I mean HUGE. I recommend halving the recipe. If you are abnormal like me and feel the need to make a huge crust o’ streusel on your cake then be my guest. But, for you normal folk, start with half! Now, streusel is super simple to make and makes everything it comes in contact with taste better. I heart streusel. You’ll need:

  • Oats – crumbly delicious texture.
  • All-Purpose Flour – to balance out the moisture of the butter.
  • Sugar – to sweeten.
  • Butter – this helps keep all the dry ingredients together.
  • Cinnamon – to flavor the streusel.
  • Walnuts – a crunchy, nutty addition.

How to Make Streusel

  1. In a small bowl, stir all ingredients for streusel together until butter pieces are small chunks found throughout the mixture.
  2. Basically, you want to disperse the butter through the dry ingredients so that when it bakes, it becomes a crusty hot mess over the apple cake. Not a powdery hot mess. There is a huge difference between the two.

  1. Sprinkle over top of the cake and bake 45-55 minutes or until a toothpick comes out clean when inserted. Remove from oven and cool.

Cream Cheese Glaze

This amazing cream cheese glaze takes this Apple Coffee Cake over the top!

  • Cream Cheese – softened! The main star of the glaze with all of its creamy, tangy goodness.
  • Butter – softened! Another fat to flavor the glaze. You can also use margarine.
  • Powdered Sugar – to sweeten.
  • Vanilla – to flavor.
  • Milk – to thin out the glaze! You can add as much or as litten as you’d like.

  1. Before serving, whip cream cheese and margarine together until smooth. Stir in powdered sugar, vanilla, and milk until smooth and runny. Add the milk slowly until desired drizzling consistency is reached.
  2. Un-hinge springform pan and place cake on serving platter. Drizzle with glaze and serve.

A super easy Cinnamon Streusel Coffee Cake recipe using a box cake mix, brown sugar, cinnamon, and graham cracker crumbs! SO GOOD!

I found this Cinnamon Streusel Coffee Cake Recipe in a magazine months ago and it was love at first sight. Not only did it look amazing, but it seemed to be one of those recipes that everyone and their mom would rave about at a potluck. This is my new go-to dessert recipe for all future life events.

Main Ingredients Needed

This Coffee Cake Recipe is beyond easy and can be whipped up in about 20 minutes or less. Then let it bake for about 40 minutes. By then you’ll have a house that smells delicious and a tasty treat to try. Here’s what you’ll need to get started:

  • Graham Crackers – this is to make the streusel. If you are an international reader, digestive biscuits will work too!
  • Brown Sugar – this is to sweeten the streusel. Once it starts baking the sugar starts to caramelize a bit and is SO yummy.
  • Walnuts – or pecans! Make sure to chop them so you have small crunchy bites instead of big ones. Also, if you can’t have nuts, just leave this bit out and replace with more graham crackers.
  • Ground Cinnamon – to flavor the streusel!
  • Butter – this is melted and is used to hold the streusel together.
  • Yellow Cake Mix – you’re going to need a good yellow cake mix and everything needed to make the batter.
  • Confectioners Sugar – to sweeten the glaze.
  • Milk – this is used to loosen the glaze so it’s pourable.

How to Make Coffee Cake

So the coffee cake is based on a yellow cake mix (easy!) and creates a streusel out of graham cracker crumbs, walnuts, brown sugar, cinnamon, and melted butter. You layer the two together and bake. It bakes perfectly because you used a cake mix and when you cut into it, it’s the epitome of coffee cake perfection. Here’s how to make it:

  1. In a small bowl, combine the cracker crumbs, brown sugar, pecans, and cinnamon. Stir in butter; set aside.
  2. Prepare cake mix according to package directions.

Layering Cinnamon Streusel

  1. Pour half of the batter into a greased 13×9-in. baking pan. Sprinkle with half of the graham cracker mixture. Carefully spoon the remaining batter on top. Sprinkle with the remaining graham cracker mixture.

Tips and Tricks

Lots of streusel – You might question yourself as you’re layering it between the cake batter because it’s a lot of streusel, but you put it in the oven, take a big gulp and it will come out perfectly!

Glass Pan – I love using a glass 9×13 pan because it’s less likely to develop crusty edges like it would in a nonstick baking pan. Just grease it well, and you will be good to go!

Mixing – No need to use an electric hand mixer or even a stand mixer for this coffee cake recipe (though you totally could….I hate the dishes) I just used a bowl, a whisk and some elbow grease for my cake mix.

The Glaze is Optional – but I think it makes it look super pretty! It’s not optional at MY house. Ha!

for the cake mix-

  • 1 package white cake mix
  • 3 eggs
  • 1/2 cup oil

  • 1/3 cup brown sugar

for the icing-

Instructions

  • Preheat oven to 350 degrees.
  • Line half sheet pan with parchment paper and lightly spray with nonstick cooking spray. Set aside.
  • Make cake mix according to package directions and spread evenly into a sheet pan.
  • Mix melted butter, brown sugar and cinnamon together and drizzle across cake batter. Using a butter knife, swirl cinnamon mixture through cake batter.
  • Bake about 15 minutes or until toothpick comes out clean after being inserted into the cake.
  • While cake bakes, stir powdered sugar, vanilla, and just enough milk to create icing the consistency of white glue.
  • Remove from oven and cool 5-10 minutes before drizzling with icing. Serve warm or at room temperature.

Lemon Cranberry Coffee Cake

I am posting this Lemon Cranberry Coffee Cake recipe because around this time of year, I usually pick up a nice big bag of fresh cranberries to make cranberry sauce. Except, I always make a small batch thus leaving me with lots of leftover fresh cranberries that I have no clue what to do with. Well, this year I got a head start on that big bag of cranberries and make a cake. Not just any cake–a delicious and refreshing coffee cake with lots of lemons and whipped cream. It’s really dreamy, creamy and delicious. When I made this for our family dinner dessert last week, it got eaten up! Devoured! Inhaled! And, thank goodness it’s gone because I would have eaten all the rest. I’m that kind of person, you know. Addicted to food, remember?

Usually, about now I try to explain how to make the cake, except today I’m going to take a walk on the wild side and say: just make this pronto….and eat the whole thing. Because it’s good. And soooo worth the calories. Promise. 🙂 Happy Weekend!

PS- You MUST make fresh whipped cream to go with this. There is no other way.

Instructions

  • Preheat oven to 350 degrees. Grease a 9x13 glass baking dish and set aside.
  • In a small bowl, mix fresh cranberries with sugar and set aside.
  • In a different bowl, incorporate butter into dry ingredients for the topping until large crumbs form and it resembles sand. Set aside.
  • In large bowl, whip butter and sugar together until light and fluffy, about 3 minutes. Reduce mixer speed and stir in eggs, 1 at a time, lemon zest and vanilla extract. Whip 30 seconds, scrape down sides and whip again for another 30 seconds. Sift all dry ingredients together and pour lemon juice into milk. With mixer on low, alternate wet and dry ingredients until everything is just combined. Scrape down sides of bowl and mix again briefly. Pour half the batter into prepared pan. Top with cranberry mixture. Spread remaining batter over cranberries and sprinkle with crumb topping.
  • Bake 40-45 minutes or until top starts to brown and toothpick comes out clean when inserted. Remove from oven and cool. Store in an air tight container for up to 4 days. Serve with fresh whipping cream.
