Another crockpot recipe is here! Warm, Hashbrown Casserole with Smoked Sausage! It’s easy, simple, and super delicious! My kids gobbled this one up, which is sort of a miracle these days plus, this took a whole 10 minutes to throw together.

Main Ingredients Needed

Here lies this magical crockpot hashbrown casserole recipe. No secrets here; I stuffed my crockpot with a package of defrosted hash brown potatoes, smoked sausages, onions, and cheese. Not a bad combination if I do say so myself. Plus it’s super easy to throw together, here’s what you’ll need:

  • Hashbrowns – frozen hashbrowns to be exact! I bought the cubed kind instead of the shredded.
  • Smoked Sausage – this is where a lot of the flavor will come from, diced.
  • Onion – this always brings a subtle but impactful flavor to dishes.
  • Cheddar Cheese – shredded. What a good combo!
  • Homemade Cream of Chicken Condensed Soup – you can alternatively use canned cream of chicken soup. Just make sure to add in enough liquid to get yourself up to 2 cups. So can of soup + water/milk/liquid of choice equal 2 cups…make sense? To make the homemade kind you’ll need butter, flour, water, whole milk, chicken bouillon paste, thyme, poultry seasoning, salt, and pepper.

How to Make Crockpot Hashbrown Casserole

  1. For the homemade condensed cream of chicken soup, melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. The sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside.
  2. Place the hashbrowns, smoked sausage, onion, and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot.
  3. Add a little more cheese to melt over the top once you’re ready to eat and that’s dinner! Do you see what I mean by easy? Serve hot.

Any leftovers you have of this tasty Crockpot Hashbrown Casserole should be refrigerated in an airtight container for up to 5 days. To reheat, simply portion out the amount you need then pop into the microwave until heated through, occasionally stirring.

Ingredients

homemade cream of chicken condensed soup

plus:

  • 32 ounces hash browns 1 bag defrosted
  • 14 ounces smoked sausage diced
  • 1 small onion diced
  • 1 1/2 cups cheddar cheese grated

Instructions

  • For the homemade condensed cream of chicken soup, melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. The sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside.
  • Place the hashbrowns, smoked sausage, onion, and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot. Serve.

Notes

*Chicken bouillon paste is similar to bouillon cubes but in a paste form. It's found in jars right next to the boxes of chicken stock. If you don't have this ingredient, simply use either powdered or cubed bouillon {enough for 2 cups of liquid according to directions on the packaging} OR 1 cup of chicken stock instead of water and add an extra 1/2 teaspoon of poultry seasoning.

    Made this tonight. Hubby said it needs more kielbasa and I agree. Maybe 20 oz or even double. I think I may add frozen peas or mixed veggies to try to get some vegetables in there, although it is delicious by itself. I used canned cream of chicken (reduced fat) mixed with slightly more than a can of milk. Definitely fits our lifestyle too, as I need slow cooker recipes that can either cook ALL DAY on low or 3 hours or less. I am gone at work from 7:30-3:30 and my husband doesn’t get home until 6:30pm, which eliminates a lot of crock recipes unless I leave it sitting on my counter prior to cooking for several hours (using a light timer), which is not a very safe option.     This is whats for dinner tonight! I just used cream of chicken soup from a can and added a cup of milk. I also used diced ham versus the sausage and it tastes so so good! Definitely one I will make again and take to potlucks.

    Well I don’t know about the flight, but I saw some good advice in a movie once. (I think it was Diehard 1) When you get there, if jet lag is really getting to you and you’re finding it hard to relax and get to sleep, just take off your shoes and scrunch them through the carpet and close your eyes and pretend you’re in the back yard scrunching them through the grass… If you can smell the grass, It’ll relax you so much you’ll be able to get right to sleep…Works for me every time…

    Thanks, this looks yummy. With three sons who are always hungry I will try this. As to the red-eye flight. Try to get on Paris time as quickly as possible. Sleep on the plane if you can. Enjoy! It is a beautiful city full of so much history. Safe travels.

    Since you are now in Paris, I have to assume you survived the red-eye flight and now I need your suggestions on how you did that. I am heading to Africa in a couple of weeks and one leg is L-O-N-G, so I will need to sleep for sure. Help?!
    PS… I am totally making this recipe when my kiddos come home for my Dad’s 90th birthday… 3 days before I leave on my trip!

      I made this for dinner and it’s really good! I made it exactly as shown in the recipe, except I just did the bouillon cube as suggested if I didn’t have the chicken bouillon paste, and I didn’t add thyme separately because it was in the poultry seasoning. It’s pretty good! However I have a suggestion….don’t add the poultry seasoning to the cream of chicken. The flavors clash with the smoked sausage. I think pepper and a little garlic salt would be better! The chicken flavor from the bouillon adds good enough flavor!

      Yes, you can either use the canned diced new potatoes, just drain them first, or you can dice whatever kind of potato you want to use. As long as they’re diced to the same size as the frozen ones they’ll be tender after three hours in the crockpot.

    How do you think it would taste without onions? No one in my family likes onions, but I’ve discovered some recipes just don’t work without them. It sounds like it would taste great, if we can do it without onions.

      I use Better than Boullion. It’s usually right there by by the other instant chicken cubes and powder in the soup stock broth area.

      The brand name is, “Better Than Bouillon”, and it’s found with the chicken , beef, and vegetable stock and broth in the grocery store. I keep it on hand in every flavor!

    This looks so wonderful!

    I’m an Oregonian studying in the UK, so I’ve made the flight loads of times! Make sure you wear something warm, because the planes are always far too cold and you’ll want to sleep. Don’t bother bringing too many things to do, because most airlines have wonderful onDemand-type screens with lots of free movies and TV shows. The best thing you can do for yourself is just to rest and sleep if you can. When I last made the flight, I swear the 10 hours only felt like two. I couldn’t believe I was suddenly on the other side of the world!

    Also, bring some snacks! They should give you plenty of food and drinks, but it’s always nice to be able to eat when you’re hungry instead of waiting for the dinner service to come around.

    Paris is lovely and if you’re planning on using a taxi to get to your hotel, get the number before you go and call them when you get there. The taxi drivers can be a bit aggressive when trying to get customers (especially American ones) from airports and train stations.

    One final thing – if you want to adjust to the time difference as quickly as possible, then eat at the correct time in Paris. It helps your body’s clock to adjust.

        This looks amazing! My thoughts though what if you made sausage gravy instead of the cream of chicken, and kinda turned this into a breakfast casserole? We go camping all the time and I’m trying to figure out breakfast ideas.

          I used cream of chicken from a can, used chicken broth, and added about 4 oz of sour cream to the pot. It was a hit with my kids.

          The potatoes would turn to mush in an instantpot. Maybe try everything but the last little bit of cheese and potatoes first and add them in at the end using the cook/saute function?

          I believe she says if you use a can of condensed soup add another can of your liquid. Ie milk or water or a cup of bouillon.
