Hashbrown Casserole Recipe

Another crockpot recipe is here! Warm, Hashbrown Casserole with Smoked Sausage! It’s easy, simple, and super delicious! My kids gobbled this one up, which is sort of a miracle these days plus, this took a whole 10 minutes to throw together.

Main Ingredients Needed

Here lies this magical crockpot hashbrown casserole recipe. No secrets here; I stuffed my crockpot with a package of defrosted hash brown potatoes, smoked sausages, onions, and cheese. Not a bad combination if I do say so myself. Plus it’s super easy to throw together, here’s what you’ll need:

  • Hashbrowns – frozen hashbrowns to be exact! I bought the cubed kind instead of the shredded.
  • Smoked Sausage – this is where a lot of the flavor will come from, diced.
  • Onion – this always brings a subtle but impactful flavor to dishes.
  • Cheddar Cheese – shredded. What a good combo!
  • Homemade Cream of Chicken Condensed Soup – you can alternatively use canned cream of chicken soup. Just make sure to add in enough liquid to get yourself up to 2 cups. So can of soup + water/milk/liquid of choice equal 2 cups…make sense? To make the homemade kind you’ll need butter, flour, water, whole milk, chicken bouillon paste, thyme, poultry seasoning, salt, and pepper.

How to Make Crockpot Hashbrown Casserole

  1. For the homemade condensed cream of chicken soup, melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. The sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside.
  2. Place the hashbrowns, smoked sausage, onion, and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot.
  3. Add a little more cheese to melt over the top once you’re ready to eat and that’s dinner! Do you see what I mean by easy? Serve hot.

Notes

*Chicken bouillon paste is similar to bouillon cubes but in a paste form. It's found in jars right next to the boxes of chicken stock. If you don't have this ingredient, simply use either powdered or cubed bouillon {enough for 2 cups of liquid according to directions on the packaging} OR 1 cup of chicken stock instead of water and add an extra 1/2 teaspoon of poultry seasoning.

Just put this in the crock pot, using canned heart healthy cream of chicken soup enough water to make 2 cups as suggested. I also tried one of those Reynolds crock pot liners to help with the clean up. I will post the results when it’s done.

First of all, it’s not a crockpot- it’s a ‘slow cooker.’ Keep it simple: use canned soup. Rather than mushy hash browns, I prefer the appearance and texture of tater tots. Also, use red onion for added color and a little sweetness.

Sound pretty good, but I don’t like onions…I also have to be careful any sausage I use doesn’t contain beef…since beef bothers my stomach.

I tried this a few weeks ago and it was tasty! My 4yo ate it without complaints (ALWAYS a bonus). I like the option for using canned (super quick and easy) or homemade (still pretty quick and easy and HOMEMADE!) soup mix. Thank you! I’m adding this to my lunch schedule this week again.

In my crockpot now! Used jalapeno sausage, corn instead of potatoes, and cream of mushroom soup because it’s what I had on hand 🙂

This hashbrown sausage casserole souhded so good, Im trying it out today! But I pre-cook the sausage nd onions. I don’t like the taste of raw onions and wa mñn t to cut down on the gease.

This looks like something that could encourage me to get out of bed if I prepared it and put the slow cooker on a timer! But I’m in the UK and can’t imagine our frozen hash browns being used like that. Ours are two-inch triangles of grated potato that are browned a little before they’re frozen. Are they like that in the US?

Use nose canceling ear buds and a good comfortable and contoured sleep mask. Pick a window seat. Download some nature sounds and read a book. That usually does the trick for me. You might also consider a good neck pillow, another for lumbar support and compression socks especially if youre not in first class or business class. Hope that helps.

We always have a Christmas morning casserole brunch and I am always looking for an easy dish to make. Will definitely try this. Thanks

I tried this yesterday and it’s very good. One question, I cooked on high for 3 hours and my hash browns turned into mashed potatoes. Is that supposed to happen?

Saw this shared on Facebook! Can’t wait to try it…. Fixing it for dinner tonight. Btw… I tried to pin it to my Pinterest board and it just linked to one of the pictures on the site for this recipe…. Didn’t have where you could get to the recipe through the pin. Just thought you should know! Thanks again for this recipe!!

Can you use canned cream of chicken condensed soup instead of the homemade? If so, what id the amount or how many cans to this recipes?

  13. Jim

While reading the recipe, I had a wild idea of this being a breakfast type of meal, just replace the home made cream chicken soup with (?) number of beaten eggs, and maybe add some diced green & red bell pepper for color / flavor.

Tips from someone who flew godzillions of long haul airmiles in a career that spanned 45 years.nOlive Bach flower remedy put 5-10 drops into one of those small bottles of water and sip regularly. I suspect the hydration is part of the results, but not all.

Change into light loose clothing so you have nothing tight constricting flow of blood, energy or other body fluids, and you can move around easily.

Walk around every hour (unless asleep) and do some stretching exercises as well.
