Just as delicious as a typical Caesar salad just made with shaved Brussel sprouts! Give this Brussel Sprout Caesar Salad a try! Brussels Sprouts Caesar Salad Caesar salad is the bomb at my house. It is a salad I can make to ensure my little ones get some sort of greens in their diet. Brooke LOVES her veggies and fruit, Blake is good about his fruit intake, hesitant of all vegetables and Ed? Well that is currently non applicable {homeboy is barely 3 months}. By the way, today I took Blake to his 3 month check up at the doctor. I mentioned that Blake doesn’t really love vegetables nearly as much as fruit so the doctor started inquiring: “Blake, what vegetables do you like to eat? Do you have a favorite?” “Soda.” I just about died. Mom of the year, you guys. Right here. I digress. So, I serve this salad weekly. More recently though I’ve been switching out romaine lettuce for brussels sprouts! I’d like to think that its a healthier option considering there’s a pound of bacon and cheese in this recipe. I suppose you could add less bacon and cheese, buuuuut why? I always err on the side of splurge. To make yourself feel better: this salad definitely feeds a crowd {6-8}, the dressing is homemade {feel free to substitute plain greek yogurt for the mayo} AND at the end of the day, this is just a big bowl of brussels sprouts! The quintessential healthy vegetable. It tastes just like caesar salad, just with a heartier texture. Brussels sprouts aren’t as tender as lettuce is, so expect that slight difference. But the flavor is spot on. Ingredients

  • 18 oz shaved Brussels sprouts
  • 1 lb bacon cooked and crumbled
  • 1/2 cup shredded parmesan cheese

Dressing:

  • 1 clove garlic grated
  • 3 tablespoons lemon juice
  • 1/2 cup real mayonnaise
  • salt & lots of freshly ground pepper to taste

Instructions

  • In a large bowl, combine brussels sprouts, bacon and cheese.
  • In a small bowl, whisk all ingredients for dressing together until smooth. Pour over salad ingredients and toss. Serve.

    This looks interesting! I am not a vegetable eater either, but this I would try. How do you prepare the Brussels Sprouts? I never heard of this before.

      The secret to this tasting so good is all the cheese and bacon. Haha! Of course that makes anything taste good! Lol! You can either buy your brussels sprouts shredded or buy them whole and slice them thinly to shred.

    I love Brussel Sprouts and Caesar Salad. Never thought of combining the two but this looks delicious. I would imagine this would have pretty great crunchy texture.

    How do you shave Brussels sprout without shaving your fingers? They are small and will be hard to hold. Am I missing something here?

        I buy them ‘shaved’ but you can buy them whole and then cut them with a knife thinly to get that shredded look.
