I think it’s a little ironic that I’m posting a recipe for energy balls when I have anything BUT energy these days.

Maybe it’s wishful thinking that these would actually give me magical energy to make it through the day slash somehow make my baby sleep longer than 3 hours at a time. Either way, I ain’t gots the energy to compete in my Dietbet. And this no processed sugar goal I made for myself is nearly killing me! Truth be told, I have given in a few times this week, but I blame that on lack of husband’s presence and lack of sleep.

I’m starting to understand why last time I had a baby I told myself “I’ll work out when I have the energy”.

Things are coming full circle for the Lauren.

ANYWAYS.

I’m going to finish this Dietbet strong because that’s what I do and then I’ll be eating all the cookies in the world reassessing my ambitions for the body I once used to know.

SO, until then, healthy eating is happening up in this household. I will prevail…she said whilst praying fervently. 

Peanut Butter Energy Bites

I made these peanut butter energy balls last week in hopes of satisfying my sweet cravings and it worked! Mind you, I ate like, 31 of them {and the recipe makes 36} but that’s besides the point. If you’re trying to eat healthy or signed up for my Dietbet, then you’re in luck 🙂

Even if you’re not on the healthy eating train, these still make a mighty tasty snack or dessert when you need a quick fix.

They come together in about 20 minutes and totally qualify as no-bake treats. Holla!

Peanut Butter Energy Bites

Peanut Butter Energy Balls are a naturally sweet energy bites recipe that boast lots of fiber, no processed sugar and a whole lot of flavor!
servings 36 small bites, approximately

Total Time 20 mins

Ingredients

  • 1 cup rolled oats
  • 1 cup rice krispies cereal
  • 1/2 cup ground flax seeds
  • 1/4 cup honey + 2 tablespoons
  • 1/4 cup all natural peanut butter + 1 tablespoon
  • 1/4 cup peanut butter powder
  • pinch of salt
  • 1 teaspoon vanilla

Instructions

  • Place all ingredients into a large bowl and stir with a rubber scraper until all ingredients are moist and sticky. Using a small cookie scoop, portion out energy bites into even balls. Roll between your lightly greased fingers, pushing ingredients towards themselves to form an even, tight ball. Place onto wax paper and continue this process until all energy bites are formed.
  • Serve at room temperature or refrigerate and store in an air tight container for up to one week.

    I’ve been a little fixated on finding a good energy ball recipe lately and have tried a few different online recipes.. I made these for the first time recently…they were delicious!!! Everyone in my family loved them too! Thanks for a great recipe!

    Hi Lauren! I’ve only used the powder peanut butter in my Kale shakes. So I’m looking forward to trying this recipe. What brand of Rice Krispies do you use in your recipe?

    For some reasons I coudn’t reply directly under Sandy’s comment but I’ve done quick calculations on nutritional value per 1 serving size/ 1 bite (0.5oz):
    Energy 60kcal | Total fat 2.3g | Total Carbohydrates 8.6g: Fiber 1g, Sugars 4g | Protein 2g.

      Peanuts that have been ground and most of fat has been removed making it a powder like protein powder. Brand name is PB2 and is carried in stores like BJ ‘s wholesale and company has a website about the product.
